Ask many winemakers what their favourite grape to work with is - and you will get the slightly surprising answer - Chardonnay! The reason? Its expressive of terroir; it is highly responsive to winemaking interventions or their deliberate lack and it can produce incredible, long-aging wines with deep, complex flavours. Its grown all over the world, in a wide range of conditions - and while you might think you know it - its a wine that can often surprise.
