The fruit was transported to the winery and fermented wild as 100% whole bunch. The fruit was foot stopped once per day until hand plunging was possible. The Shiraz component was hand-picked early April, at a low’ish sugar level, to produce a light and spicy style of Syrah. Ferments were fermented wild with 100% whole bunch. The fruit was foot stopped once per day, until hand plunging was possible. The Shiraz ferments were basket pressed to tank after five days on skins, while colour and tannin were still moderate. Once sugar dry, the juice was transferred to old hog heads for malo-lactic fermentation.\u003cbr\u003eThe components were blended and bottled in September.
