Assyrtiko is the indigenous white grape of Santorini. Its grown throughout Greece but only on Santorini does it reach this height of tight minerality combined with lemon, white fruits, a strong line of acid and delightful salinity. The vines for Thalassitis are nearly 80 years old and have their own distinctive personality. This is a superb wine that will take you straight to the white terraces and blue rooves of the Greek islands.
Enjoy it at 10oC with seafood, fish, shellfish or even lamb stewed in lemon sauce. Poured into a wide decanter about half an hour before serving will further enhance the experience. This will age for at least 2 or 3 years - the fruit and honey aromas expanding to overtake the tight minerality.
