Grown in the Hawkes Bay Millar Rd Vineyard this is Sauvignon Blanc but definitely not as you know it! It spends six hours on skins, has a wild ferment and then spends 8 months aging on lees which are stirred each full moon. The resulting wine has wonderful fruit - but its crunchy green fruits rather than a Marlborough Savs tropical profile. There's also some savoury elements here and a surprising salty tang on the finish. Plenty of acid to keep it food friendly but with a depth of flavour that means this wine can genuinely stand up to full on spicy food.
