
Tsinandali is a Georgian white wine made from Tkatsiteli and Mtsvani grapes. Its zingy line of acid responds well to time in oak. The acid is still present as a lovely citrus flavour but softened and made more food-friendly. Think fume blanc rather than chardonnay but with plenty of white peach fruitiness. Great with a roast chook and fresh enough to compliment grilled prawns or some oily fish.
