From his micro-brewery just out of Hamilton, Daryl is producing genuine Belgian-style lambic beers of incredible quality. From aging the hops, to making his mash from scratch; all the way through to barrel-aging his saison and then macerating with whole fruit - this is a one-man labour of love. Daryl even hand-ties each cork closure. This artisan attention to detail is enough to have us interested - but the incredible depth of flavour, fruit freshness and refreshing crisp sourness in every bottle is what we are really loving. Grape ales are traditionally made in Italy - this is Daryl's take on the style using the Syrah skins left over from Rose production at Raglan winery Barrelled. His saison is re-fermented on the Syrah must producing a sour beer with distinctive wine aromas and flavours. There's an intense Syrah fruitiness on both the nose and palate. This is lively and refreshing with a long finish.
