From his micro-brewery just out of Hamilton, Daryl is producing genuine Belgian-style lambic beers of incredible quality. From aging the hops, to making his mash from scratch; all the way through to barrel-aging his saison and then macerating with whole fruit - this is a one-man labour of love. Daryl even hand-ties each cork closure. This artisan attention to detail is enough to have us interested - but the incredible depth of flavour, fruit freshness and refreshing crisp sourness in every bottle is what we are really loving. Honeyberries are sometimes called haksaps. They are an elongated blue berry with a pleasant tart sweetness when ripe. They are also a superfood! The saison has been re-fermented on these berries for two months before bottle-conditioning. This beer will continue to develop in the bottle for many years to come.
