Blend: skin fermented Pinot Gris + whole bunch pressed Syrah rose
and Pinot Noir rose.

This is Halcyon Days’ version of structured rosé. Made by us for our friends Conor and Ash from Ruth. We wanted to explore what Syrah could add to a Rose blend and we found out that it's zip, and a neon hue! This is a blend of skin fermented Pinot-Gris, whole bunch pressed Syrah rose (all Chave clone) and a little Pinot-Noir rose.

On the eye: Bright neon pink colours
On the nose: Watermelon, strawberries, raspberry leaf and juniper
On the palate: Juicy rich fruit with tight acid backbone, lovely savoury finish and
chalky texture.
