Theo Coles is an advocate of low-intervention, natural winemaking - letting the small vineyards he works with speak through the wines. This is a sparkling made in the ancestral method (a pet nat). Complex but also deliciously drinkable.

"This is just delicious!
Divine colour. Soft bubble. Complex flavour; not sweet, a little savoury even. As for what it smells like - one of us said the forest, I got a little mushroom in there, definitely. It would certainly pair well with pretty much anything (salted crisps I can vouch for).
Best wine I’ve tried in a long time."
