Time to change your mind about fruit wine! This is a beautiful expression of the golden plum and might remind you a little of a fiano with its crisp acid and tannic edge. 

As for winemaking; this is a serious endeavour - here's a taste from what winemaker SandRa says "Plums were hand harvested by the family summer of 2022/2023, mashed by hand and macerated with sugar for three days, sieved and siphoned off, water was added and pH adjusted. 'Champagne' yeast was pitched and we had a furious ferment for seven days until it was racked off for a more gentle ferment for three months.  Bulk aged for a spell until the wine was bottled in April 2023."
