“The wine is a blend of 55% Pinot Blanc, 32% Sauvignon Blanc and 13% Riesling and Chardonnay ‘svinatura’ in Italian – the juice that comes out of the press that is denser, more ‘solidsey’, has more contact with the skins, more flavour, but can also be harsh and bitter if not treated properly…
100% Organic (Bio-Gro certified). Pressed juice, held cold, then blended as juice and racked into barrel – all very old, neutral barrels… Then left, sur lie on gross lees for 8 months – no stirring – just kept topped, naturally went through primary and secondary fermentation. No additions, unfiltered, 30 mg/L total sulphur.
Pale straw in colour, and slightly hazy in appearance, this wine shows lifted notes of wild fennel interlaced with subtle elderflower aromas. The palate shows incredible balance with layers of texture, yet it has poise and is fine boned, finishing with lashings of grapefruit acidity leaves you wanting for more.”
