Vermentino (88%), Verdelho (8%), Sauvignon Blanc (2%), Pinot Gris (2%)
Although this wine hits all the natural wine talking points, no adds, wild ferments, minimal sulphur, the goal was to keep it clean and approachable. All four varieties were aged separately, the Vermentino and Verdelho in stainless steel tanks, on lees, but with no stirring (i.e. surlie) to develop the mineral/oyster shell like character that is so refreshing in Soave and Muscadet sur lie. Vermentino being the predominant variety brings the fresh apple, almond nuttiness and sea spray character, Verdelho brings a little more citrus and freshness, and the Sauvignon Blanc and Pinot Gris offer texture and length from barrel fermentation and mlf. We carefully racked the wines off lees, and let them settle again, before racking again and blending. Ultimately, the varieties are quite neutral and rather than fight that, we embraced that varietal character to make the refreshing and versatile wine in the bottle.
