Wild yeast fermentation in tanks over a long period allows this iconic producer to make a Pinot Gris with fantastic complexity and texture. There are stone fruit and peach flavours and a lovely floral note. This wine has the succulent sweetness to stand up to strong flavours, even chilli, but without losing any freshness.
This is delicious with fish and would be a juicy accompaniment to pork. Its also a wine which is great with anything a little spicy - it will compliment those flavours well.
