Here's what Ollie Powrie has to say about this fantastic wine "Pristine Cabernet Sauvignon was harvested on the 10th April 2023. The destemmed berries filled a 500 L Hungarian amphora. Hand plunged daily and sealed up on skins and seeds for 150 days. Pressed to one aged oak barrel for 5 months and bottled in the driveway." What he doesn't add is the incredible complexity and layers of flavour that this method has achieved from those beautiful cab sav grapes. This wine is still very young - but already drinking well - there's plenty of upfront fruit, balanced tannins and then the layers of flavour that just keep giving. Plus the time on skins and seeds gives the wine a deeply satisfying texture. (We've got limited stock on-hand - but let us know and we'll twist Ollie's arm for a few more bottles!)
