Seresin winemaker Tamra Washington also makes the Beautiful Chaos range. This is a skin-contact blend of Pinot Gris and Riesling, all from the biodynamic Seresin vineyard. It is fermented on skins for 21-26 days in amphora, using wild yeasts before being basket-pressed into old oak barrels to age for three months, during which the softening malolactic fermentation occurred naturally. There is no fining or filtering and only minimal sulphur at bottling. There is a nose of honey with ripe apple, blood orange and pithy pink grapefruit. A hint of thyme and something savoury underneath.
