This is Prosecco, but not as you usually know it. Made in the col fondo style, this wine is like the pet nats you may be more familiar with. Its a sparkling wine that like those made hundreds of years ago, has had its secondary fermentation in the bottle. Its then rested on its lees and developed incredinle bready yeasty flavours alongside the fruitiness you'd expect from Prosecco. You can keep the bottle upright to avoid the cloudiness caused by these lees when pouring - but then you'd also miss out on loads of flavour and texture. Just 10.5% abv, bone dry and beautifully refreshing.
