Pinot Noir (75%) and Pinot Gris (25%) make up this spicy wintery wine. Fruit is hand harvested from organic vineyards in the Upper Moutere, Nelson. The grapes are fermented whole cluster for four days, then pressed into stainless steel to finish fermentation and ageing. Bottled unfined, unfiltered, and with zero additions.
