Gewürztraminer (50%), Pinot Gris (10%), and Riesling (40%) grown in organic vineyards in the Upper Moutere, Nelson. The fruit is hand harvested, then a co-ferment of Riesling, Gewürztraminer, and Pinot Gris is left on skins for 10 days in amphora (Spanish Tinajas). The remaining Gewürztraminer and Riesling is co-fermented in open fermenters on skins, then pressed off into amphorae for ageing
