From his micro-brewery just out of Hamilton, Daryl is producing genuine Belgian-style lambic beers of incredible quality. From aging the hops, to making his mash from scratch; all the way through to barrel-aging his saison and then macerating with whole fruit - this is a one-man labour of love. Daryl even hand-ties each cork closure. This artisan attention to detail is enough to have us interested - but the incredible depth of flavour, fruit freshness and refreshing crisp sourness in every bottle is what we are really loving. These are delicious beers - get some in for summer and see for yourself. 

This is a strong dark ale, aged in oak barrels for 2 years with a range of microbes and black currants. It is moderately sour with rich flavours of dried fruit, leather, tobacco, a hint of oak. Alreay incredibly complex, this will continue to develop in the bottle for many years.
