From his micro-brewery just out of Hamilton, Daryl is producing genuine Belgian-style lambic beers of incredible quality. From aging the hops, to making his mash from scratch; all the way through to barrel-aging his saison and then macerating with whole fruit - this is a one-man labour of love. Daryl even hand-ties each cork closure. This artisan attention to detail is enough to have us interested - but the incredible depth of flavour, fruit freshness and refreshing crisp sourness in every bottle is what we are really loving. Here you get all the complex flavour of Japanese Ume plums along with a delicious saltiness. Naturally sour and incredibly refreshing, this is a delicious accompaniment to seafood or dishes with Asian flavours.
