Salinity is a collaboration between winemakers Theo Coles, Alex Craighead and wine professional Becca Goodall. This is the first of the wines released under the Salinity range. The wines are fruit-driven, fun, bright and exceptional value.
VITICULTURE/WINEMAKING NOTES: Hand harvested from several blocks around North Canterbury, this blend is predominantly Merlot from gravel soils (with a little Cabernet Franc grown in the same rows), with Pinot Noir, and Pinot Gris. The Merlot and Cab Franc were destemmed and fermented with indigenous yeasts in an old wooden vat, and only one foot plunge. The wine was pressed off into a 500L amphora to age and topped with some Pinot Noir/Pinot Gris. Bottled unfined and unfiltered with a minimal sulphur addition just before bottling.
TASTING NOTE: It’s Merlot Jim, but not as we know it! Wild blackberries from the Merlot, and floral spicyness from its blend fellows. Seriously moreish.
